These paleo keto muffins are low-carb, low-glycemic and gluten-free.  They are ok to freeze and keep for a week in the fridge.  Play around with the veggies you add to easily increase your serves of veggies you eat per day.  I like adding mushrooms, zucchini, broccoli and cauliflower.
